Easy Roasted Cauliflower. Kid approved!

Sometimes adding a veggie to your dinner doesn't have to be complicated. One of my kids loves veggies. The other, not so much. Rest assured that this could be a winner with everyone in the family. You won't have to bribe the kids into eating it by adding layers of cheese or other unhealthy toppings. My son gets excited when I make this and refers to it as the "burnt cauliflower". So let me clarify. It's not burned, it's roasted, crispy and delicious! :)

Ingredients:

1 Head of Cauliflower

1 TBSP Extra Virgin Olive Oil

Himalayan Salt

Black Pepper

Set oven for 425 Degrees. Rinse cauliflower and then cut up into small bite sizes. Add 1 TBSP extra virgin olive oil and sprinkle with Himalayan salt and black pepper. Don't go too crazy on that salt and pepper! Mix it all together. Place on baking pan. Bake about 15 minutes. Grab a spatula and mix the cauliflower a bit and heat for an additional 5 minutes. It should come out crispy. You can take it out if you don't want it too crispy. Leave it in for an additional minute or two if you want more "burnt" spots.
